From the esteemed Iris Estate in the highlands of Volcán, Chiriqui comes this green-tip geisha, grown at elevations of up to 2,300 masl. A special collaboration between Jamison Savage, Sasa Sestic, and Elvin Siew, this Enigma lot is processed using carbonic maceration, a method inspired by winemaking — placing whole cherries in stainless steel barrels, allowing them to ferment in a carbon dioxide-rich environment. This results in a vibrant and flavourful cup.
