This coffee undergoes a unique process developed by Andres Quiceno, known as “Nitro Fermentation.”
In this process, the coffee cherries are de-pulped and placed into a steel tank, together with specially extracted yeast and fruits. The tank is then pressurized with nitrogen to create an oxygen-free (anaerobic) environment.
This process enhances the clarity of flavors and significantly elevates the overall taste quality of the coffee.
