Cultivating this Liberica lot using the farm’s Anaerobic N26 method — where the beans go through a meticulous 26-day fermentation in sealed barrels before the drying process — brings out a sweeter, funkier profile compared to the traditional natural method. A medium-light roast profile yields notes of peach, dried longan, red dates and black tea.
